2 cups almond milk*
1/2 cup dried apricots
3/4 cup water
3/4 cup honey
1 teaspoon vanilla
In a small covered saucepan, cook apricots in 3/4 cup of water for 10 minutes or until tender.
In a food processor or blender, process apricots and cooking liquid to a smooth puree. Mix in honey, almond milk and vanilla and and blend well. Place mixture in bowl, cover and chill thoroughly.
Pour chilled mixture into ice cream maker and proceed according to directions. Freeze until firm.
*You can use store-bought almond milk, but we think it’s even more delicious with homemade almond milk. Soy milk also works, if you prefer it.
