Cherry Brandy

One way to extend the enjoyment of our local cherry season is to make cordials that can be enjoyed later in the fall or bottled for special homemade gifts during the holidays. Brandied cherries are delicious added to drinks or spooned over ice cream.

INGREDIENTS:

1 cup sugar
1 cup water
1 cup pitted cherries or raspberries
1 cup good quality brandy

METHOD:

In a small saucepan, combine the sugar and water and bring to a boil, stirring until the sugar dissolves. Remove from heat and cool.

When the syrup has cooled, stir in brandy and cherries. Pour contents into a large jar with tight-fitting lid.

Store in a cool dark place for 2 or 3 months.
