Preserving Demonstrations by Jordan Champagne of Happy Girl Kitchen Company

Jordan Champagne from Happy Girl Kitchen Company will be demonstrating her signature preserving techniques, explaining food safety issues, and sharing her special recipes. Many of you may be familiar with her products that are sold at local specialty stores and markets. Preserving demonstrations will be held at the Friday Monterey Farmers Market at Monterey Peninsula College and at the Saturday Aptos Farmers Market at Cabrillo College.

Jordan ChampagneJordan and Todd Champagne began Happy Girl Kitchen Company out of their sheer love of food. After working on farms for years and preserving the glut of the California seasons, Todd and Jordan are now lauded as key members in the thriving food community of the Central Coast.

Berry Jam Demonstration

Jordan will teach you how to make delicious jams and how to preserve food safely. She will share her secret techniques for making low sugar jams that are packed with fresh fruit and flavor. She will also cover techniques for making and testing your jam so that it will come out perfect every time. The demo will begin with an introduction covering the topics of hot water bath canning, pH scale, and basic food safety.

Since we will be right on the brink of the summer fruits coming to the farmers markets, this is a perfect time to learn how to make jam. Jordan will use local organic berries that are in season to create some fabulous jams. She will show you how to add spices, herbs, and citrus to your jams to create your own unique recipes.

Stone Fruit Jam Demonstration

This jam making demo will feature stone fruits including Blenheim apricots. Blenheim apricots are a heritage summer fruit that are on the brink of extinction because they do not store or ship well, and are generally only available at farmers markets or backyard growers. Blenheims and other stone fruits make the most delicious jams.

Pickles Demonstration

Jordan says, “Pickles is a fun word to say and they are a real fun thing to make.” Jordan will demonstrate how to make pickles in three different ways. You will learn how to make fresh refrigerator pickles, fermented pickles, and shelf stable vinegar brined pickles that will be hot water bath canned.

The pickles demonstration will begin with an introductory talk and tasting. Jordan will share her secrets about how to get the right texture and flavor in your pickles and how to preserve pickles safely with her simple and delicious recipes. Canning Tomatoes

This demonstration is basically a great party with tomatoes as the guest of honor! With all of the wonderful tomatoes available on Central Coast in the late summer, it would be a shame not to preserve tomatoes for our rainy winters. There are amazing heirloom tomatoes that are grown at local farms, many of which wouldn’t survive the rough-and-tumble-road to the grocery markets. Jordan will teach you the art of putting up these luscious heirlooms as well as the tasty dry-farmed Early Girl’s, and explain the differences in canning these two varieties.

There are many myths when it comes to canning tomatoes. Jordan says, “Many recipes will have you blanching, peeling, sterilizing, etc., until you want to pull your hair out! In my demonstration, folks will learn how to jar up tomatoes the Happy Girl way — simple and delicious. We’ve got all kinds of tricks and tips to get you on your way to a pantry full of summer tomatoes.” The demo will include information about pertinent food safety issues, pH scale and hot water bath canning.

How to Make Sauerkraut

The sauerkraut demonstration will begin with an introductory talk, tasting, and how to get the right texture and flavor in your sauerkraut. Jordan will will cover topics about pH, botulism. Jordan says, “You will walk away from this demonstration with ferment fever and you will start fermenting all sorts of things. You will learn how to make great sauerkraut and kimchi and how to design your own recipes and flavor combinations.”
