1 lb. wild salmon
1/2 cup soy sauce
1/4 cup maple syrup
Cayenne and black pepper
In a bowl combine soy sauce and maple syrup. Marinate wild salmon for 1 hour (overnight if possible). Place salmon skin side down on broiler pan. Sprinkle salmon liberally with cayenne and black pepper. Broil until flesh separates easily with fork in thickest part.
Variation: BBQ skin side down until done.
