Summer Peach Salsa


2 cups ripe peaches, peeled and diced
1/2 cup red onion, diced
1/2 cup red bell pepper, diced
1/2 cup fresh mint, minced
3/4 teaspoon minced jalapeno or serrano chile
2 tablespoons olive oil
2 tablespoons lime juice
2 tablespoons fresh ginger root, grated


Combine all ingredients and serve. Salsa is better if allowed to mellow for half an hour before serving.

NOTES: Delicious with grilled fish, chicken, or lamb.
