Sweet and Spicy Avocado Soup


2 medium avocados
4 cups zucchini
1/2 cup firmly packed basil
1/2 cup firmly packed spinach
2 tablespoons ginger
4 cloves garlic
3 cups fresh orange juice
1/4 cup fresh lemon juice
2 tablespoons olive oil
2 teaspoons salt


Place all ingredients in blender and process until blended. Add 2 cups of water after blending. Divide into bowls, serve immediately.

YIELD: Serves 6.

NOTE: This is a delicious raw, vegan soup. Make one batch at a time. Do NOT double!
