Old Fashioned Corn Fritters

Golden, crisp, and irresistibly light—these corn fritters are comfort food at its best. A favorite from Grandma’s kitchen, they make a perfect side for fried chicken or fish, a savory appetizer with sour cream and salsa, or even a breakfast treat drizzled with warm maple syrup and served alongside sausage. However you top them, these fritters are guaranteed to disappear fast!

INGREDIENTS:

1 1/4 cups flour
2 teaspoons baking powder
2 teaspoons sugar
1/2 teaspoon salt
1/4 teaspoon pepper
2/3 cup milk
3 large eggs, separated
2 tablespoons butter, melted and cooled
2 1/2 cups corn kernels (fresh or frozen, thawed and drained)
Vegetable or peanut oil for frying

METHOD:

In a large bowl, whisk together flour, baking powder, sugar, salt, and pepper.

In a separate bowl, whisk together milk, egg yolks, and melted butter. Stir in corn.

Gently stir the wet mixture into the dry ingredients until just combined. Do not overmix. Let the batter rest for 5 minutes.

 In a clean bowl, beat the egg whites until stiff peaks form. Carefully fold them into the batter.

In a heavy skillet, heat ½ inch of vegetable oil to 375°F over medium-high heat.

Drop about ¼ cup of batter into the hot oil, without crowding. Fry until golden brown, about 2 minutes per side.

 Transfer fritters to a paper towel–lined plate. Keep warm in a low oven while cooking remaining fritters. Serve hot with your favorite toppings.

SERVING SUGGESTIONS

Savory:

  • Add garlic powder, onion powder, cayenne, paprika, or fresh herbs to the batter.
  • Top with sour cream, salsa, and green onions.
  • Serve with sour cream, dill, and smoked salmon.
  • Make bite-size fritters and serve with Thai chili sauce.

Sweet:

  • Top with butter and maple syrup or honey.
  • Serve with sausage and eggs for a hearty breakfast.
