Blue Cheese Compound Butter

Compound butters have long been a chef’s secret for turning simple dishes into extraordinary ones—and this blue cheese version is no exception. INGREDIENTS:
1 cup butter, softened (use a good quality, flavorful butter)
1/2 cup crumbled blue cheese (we use Schoch’s Family Farmstead blue cheese)
1 tablespoon chopped parsley
1 tablespoon chopped fresh basil
1 clove garlic, minced
1/4 teaspoon salt
1/4 teaspoon freshly coarse ground pepper

METHOD:

In a medium bowl, combine softened butter, blue cheese, parsley, basil, garlic, salt, and pepper. Use a fork or spatula to mash and blend until evenly combined.

Transfer the mixture onto a sheet of parchment or plastic wrap. Shape it into a rough mound, then roll and mold into a log, twisting the ends to seal.

Refrigerate for at least 1 hour, or until firm. For longer storage, freeze for up to 3 months.

Slice into thick pats and place over hot grilled steaks, stir into vegetables, or spread on warm bread. Allow the butter to melt slightly before serving.
