When your schedule doesn’t allow for making fresh cinnamon rolls, this coffee cake is the next best thing.
INGREDIENTS:
CAKE
3 cups all-purpose flour
1/4 teaspoon salt
1 cup sugar
4 teaspoons baking powder
1 1/2 cups milk
2 eggs
2 teaspoon vanilla
1/2 cup butter, melted
TOPPING
1 cup butter, softened
1 cup brown sugar
2 tablespoons all-purpose flour
1 tablespoon cinnamon
GLAZE
2 cups powdered sugar
5 tablespoons milk
1 teaspoon vanilla
METHOD:
For the cake, place all cake ingredients in a mixing bowl EXCEPT for the butter. Combine mixture until well combined. Slowly stir in the melted butter. Do not over-mix. Pour batter into a greased 9 x 13-inch pan.
For the topping, mix all the topping ingredients together until well combined. Drop evenly over the batter and swirl into the batter with a knife. Bake at 350°F for 28-32 minutes.
For the glaze, place glaze ingredients in a bowl and stir until well combined. While the cake is still warm, drizzle the glaze over the cake. Allow cake to cool for at least 15 minutes before cutting.
