French Hot Chocolate

INGREDIENTS:

1 cup rich, whole milk
1/3 heavy cream
1/4 cup sugar
5 ounces best-quality semisweet chocolate, chopped

METHOD:

Combine the milk, cream, and sugar together in a saucepan and heat until it just comes to a boil. Turn off the heat. Stir in the chocolate and gently whisk the mixture until the chocolate has completely melted.  Serve warm in small demitasse cups.
