Dried Apricot and Plum Compote

Simple and elegant, this old-fashioned fruit compote transforms humble dried fruit into a jewel-toned dish rich with natural sweetness and warm spice. The combination of apricots, prunes, and golden raisins simmered with cinnamon and citrus creates a comforting treat that’s as lovely served warm as it is chilled.

INGREDIENTS:

1 cup dried apricots
1 cup dried plums (or prunes, pitted)
1 cup golden raisins
1/2 cup sugar
1 strip of lemon peel
2 whole cloves
1 cinnamon stick
1/4 teaspoon allspice

METHOD:

Place the apricots, plums, and raisins in a medium saucepan. Add enough water to just cover the fruit.

Bring to a boil over medium heat. Reduce the heat to low, cover, and simmer for 15 minutes.

Add the sugar, lemon peel, cloves, cinnamon stick, and allspice. Stir gently to combine, adding a little more water if needed to keep the fruit just submerged. Simmer uncovered for 10–15 minutes, or until the fruit is tender and the syrup has thickened slightly. Stir occasionally to prevent sticking.

Remove the lemon peel, cinnamon stick, and cloves. Allow the compote to cool, then refrigerate for several hours before serving.

SERVING SUGGESTIONS:

  • Spoon over slices of pound cake, angel food cake, or vanilla ice cream for an elegant dessert.
  • Serve chilled over creamy oatmeal, yogurt, or cottage cheese for a nourishing breakfast.
  • Pair with roasted pork or duck for a sweet-savory accompaniment.
