INGREDIENTS:
2 English cucumbers
1 cup freshly squeezed lemon juice
4 cups water
3/4 cup sugar*
Ice for serving
* 1/2 cup of agave syrup (or to taste) can be used in place of sugar.
METHOD:
In a blender, combine half the cucumber chunks, 2 cups water, and half the sugar (or agave). Blend until smooth. Pour into a pitcher. Repeat with remaining cucumber, water, and sugar.
Stir in lemon juice until well blended. Taste and adjust sweetness as desired.
Fill tall glasses with ice and pour cucumber lemonade over the top. Garnish with cucumber slices, lemon wedges, or mint sprigs.
VARIATION:
For a fizzy version, replace the 4 cups water with 2 cups water (for blending) and 2 cups chilled sparkling water. Add the sparkling water just before serving to keep it bubbly.
