This Chilled Broccolini with Spicy Caribbean Chile Lime Dip brings a burst of tropical flavor to the table. Tender, crisp broccolini is served cold alongside a bright, zesty dip made with fresh mango or peach purée, tangy lime juice, and fiery chiles. INGREDIENTS:
1 bunch broccolini, trimmed and blanched
1/3 cup fresh peaches or mangoes, pureed
3 tablespoon mango chutney, finely chopped
2 tablespoons fresh lime juice
1 teaspoon serrano chiles, finely minced
2 tablespoons red chiles, finely minced
3/4 teaspoon ground cumin
1/8 teaspoon salt
METHOD:
Bring a large pot of salted water to a boil. Add the broccolini and blanch for about 1 minute, just until bright green and slightly tender.
Immediately transfer the broccolini to an ice-water bath to stop the cooking process. Once cooled, drain well and refrigerate until ready to serve.
In a small bowl, combine the puréed peaches or mangoes, mango chutney, lime juice, serrano chiles, red chiles, cumin, and salt. Stir until blended.
Cover and chill the dip for at least 30 minutes to allow flavors to develop.
Serve the chilled broccolini whole with the spicy Caribbean chile-lime dip on the side for dipping.
