INGREDIENTS:
1 8 oz. package cream cheese, softened
1 tablespoon milk
1/2 cup finely chopped dates
1/2 cup finely chopped walnuts
Extra finely chopped nuts for rolling
METHOD:
In a food processor, combine the softened cream cheese and milk. Blend until smooth and slightly thinned.
Add the chopped dates and walnuts. Pulse just a few times, until evenly distributed but not fully puréed (you want some texture).
Scrape the mixture into a small bowl, cover, and refrigerate for at least 1 hour, or until firm enough to shape.
Using a small scoop or teaspoon, portion the mixture and roll into bite-sized balls.
Roll each ball in finely chopped nuts until evenly coated.
Arrange on a tray, cover, and chill until ready to serve.
