INGREDIENTS:
2 cups shredded extra-sharp cheddar cheese
8 ounces cream cheese, softened
1/2 cup mayonnaise
1/4 teaspoon garlic powder
1/4 teaspoon ground cayenne pepper
1/4 teaspoon onion powder
1/2 – 1 jalapeño pepper, seeded and minced (optional)*
1 (4-ounce) jar diced pimento, drained
Salt and black pepper to taste
METHOD:
In the bowl of a stand mixer fitted with a paddle attachment, combine the cheddar cheese, cream cheese, mayonnaise, garlic powder, cayenne, onion powder, jalapeño (if using), and pimento. Beat on medium speed until the mixture is creamy and well combined, scraping down the sides of the bowl as needed.
Taste and season with salt and black pepper.
Transfer the spread to a small bowl or jar, cover, and refrigerate for at least one hour to let the flavors blend.
Allow to soften slightly at room temperature before serving for the best texture.
ALTERNATE METHOD:
For a softer, whipped version, place all ingredients except the jalapeño and pimento in a food processor. Blend until smooth, then stir in the peppers by hand.
