Toffee Walnuts

Toss a few toffee walnuts in green salads with roasted pears and gorgonzola, or place them in a bowl for guests to snack on. Toffee walnuts make great holiday gifts for friends and family!

INGREDIENTS:

3 cups walnuts, shelled
1/2 cup brown sugar
1/2 cup granulated sugar
2 tablespoon water
4 tablespoons butter
1 teaspoon pure vanilla extract

METHOD:

Line a half-sheet baking pan with parchment or a silicone mat.

In a large saucepan, combine brown sugar, granulated sugar, water, and butter. Stir to combine. Attach a candy thermometer.

Cook over medium heat, stirring constantly until the mixture comes to a boil. Add walnuts.

Stirring constantly, cook the mixture until it reaches 285-290 degrees, being careful not to burn the mixture. Remove from heat, add vanilla and stir well to combine.

Working quickly spread nuts on the lined baking sheet. While warm, use two forks to separate the nuts. Allow to cool until hardened. Store in airtight containers.
