Blue Cheese and Cracked Wheat Crackers

We enjoy the savory combination of tangy blue cheese and hearty cracked wheat with these easy-to-make homemade crackers. Perfectly crisp and full of flavor, they’re a delightful addition to cheese boards, soups, or a simple snack. We recommend the local blue cheese from Schoch Family Farmstead.

INGREDIENTS:

1 cup all-purpose flour
1/2 cup uncooked bulgur (cracked wheat)
1/2 teaspoon salt
1/4 teaspoon baking soda
1/2 cup low-fat buttermilk
1/4 cup crumbled blue cheese (1 ounce)
2 tablespoons vegetable oil
2 tablespoons all-purpose flour divided
Vegetable cooking spray

METHOD:

In a medium bowl, combine the first 4 ingredients; stir well. Add the buttermilk, cheese, and oil, stirring until a soft, sticky dough forms. Divide the dough into 4 equal portions and shape each into a ball.

Sprinkle 1 tablespoon of flour evenly over the dough balls. Cover them and let rest for 5 minutes.

Preheat your oven to 375°F. Lightly coat a baking sheet with cooking spray.

Place one dough ball on the prepared baking sheet and roll it into a paper-thin rectangle (10 x 6 inches). Dust the dough with up to 1 teaspoon of flour as needed to prevent sticking to the rolling pin.

Using a knife or pizza cutter, score the dough with 4 lengthwise cuts and 2 crosswise cuts to form 15 rectangular crackers. Prick each cracker diagonally 4 times with a fork to allow steam to escape during baking.

Bake in the preheated oven for 11 minutes, or until the crackers are crisp and lightly golden. Remove from the baking sheet and transfer to a wire rack to cool completely. Break apart into individual crackers along the scored lines.

Repeat the rolling, scoring, and baking process with the remaining dough portions.

YIELD: 5 dozen crackers
