Breakfast Egg Bites

Need a quick, protein-filled, grab-and-go breakfast or snack? We love this recipe submitted by Rocky Oaks Goat Creamery!

INGREDIENTS:
1 12 oz. package bacon, diced and cooked until crispy
10 large eggs
2 cups cottage cheese
1 teaspoon baking powder
2 cups chopped fresh spinach, cooked and drained
1 can green chiles, diced
2 cups Rocky Oaks Goat Creamery Heritage Gouda, shredded
1 teaspoon pepper, or to taste (no need to add salt; the bacon and other ingredients provide plenty of flavor)

METHOD:
Preheat oven 375°F. Mist muffin pan* with non-stick cooking spray. Set aside.

Place eggs, cooked bacon, cottage cheese, and baking powder in a large mixing bowl. Whisk to thoroughly combine.

Add cooked spinach, green chiles, and shredded cheese.

Fill muffin cups a little over half full with mixture. Bake 15-20 minutes, or until the mixture is set and the tops are light golden brown.

Allow the egg bites to cool and rest before removing from pan. Garnish with chopped chives, if desired.

*Silicone muffin pans are ideal for baking egg bites!
