This rustic yet elegant frittata combines the sweetness of caramelized onions, the earthiness of tender potatoes, and the bold, creamy flavor of Gorgonzola cheese. INGREDIENTS:
1 tablespoon butter
1 tablespoon olive oil
3 onions, medium onions, halved and thinly sliced
2 medium potatoes, diced (about 2 cups)
12 large eggs
3/4 cup half and half
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/2 cup Gorgonzola cheese, crumbled
1 tablespoon fresh thyme leaves
METHOD:
Preheat the oven to 400°F and position a rack in the middle of the oven.
In a large ovenproof skillet (10–12 inches), heat the butter and olive oil over medium heat. Add the sliced onions and diced potatoes. Cook, stirring occasionally, until the onions are golden brown and the potatoes are tender, about 10–15 minutes.
In a large bowl, whisk together the eggs, half-and-half, salt, and pepper until light and frothy.
Pour the egg mixture evenly over the onions and potatoes in the skillet. Cook on the stovetop over medium-low heat for 5–6 minutes, or until the edges begin to set but the center is still soft.
Sprinkle the Gorgonzola cheese and thyme leaves evenly over the top. Transfer the skillet to the oven and bake until the frittata is slightly puffed, golden, and just set in the center, about 15–20 minutes.
Remove from the oven and let the frittata rest for 5 minutes before slicing into wedges. Serve warm or at room temperature.
