INGREDIENTS:
4 cups fresh blueberries
2 cups sugar
1 tablespoon pure vanilla extract
Pinch of salt
1 cup whole milk
1 cup half and half
2 cups heavy whipping cream
METHOD:
Place blueberries in a food processor bowl (or blender) and process until berries are puréed.
In a large saucepan, pour in puréed blueberries and stir in sugar. Heat over medium heat until the sugar dissolves. Refrigerate mixture until very cold, about 3-4 hours.
To the puréed blueberry mixture, stir in vanilla, salt, whole milk, half and half, and cream.
Pour into the ice cream maker and churn according to the manufacturers’ directions. When ice cream is finished, pack it into a container, cover it, and place it into the freezer to set up and ripen.
