Ukrainian Apple Squares

Ukrainian apple squares are a beloved old-world pastry, often baked during the winter holidays when stored apples begin to soften and need to be used up. Sweet, spiced apples are layered between a tender sour cream–based pastry, creating a treat that is rustic yet elegant. Traditionally cut into squares for easy sharing, these bars are perfect for festive gatherings, afternoon tea, or simply as a cozy dessert any time of year. With apples now available year-round, you can enjoy this fragrant, nostalgic dessert well beyond the holidays.

INGREDIENTS:

4-6 apples, peeled, cored, and diced
1/2 cup dates or golden raisins, chopped
1/4 cup sugar
1 teaspoon vanilla
1 teaspoon cinnamon
1 3/4 cup flour
1/2 cup sugar
2 teaspoons baking powder
2 large eggs
1 cup sour cream
1/2 cup butter
1 teaspoon vanilla
Powdered sugar (optional)

METHOD:

Preheat oven to 350°F. Generously butter a 9 x 9 x 2-inch baking pan.

In a medium bowl, toss the diced apples with the chopped dates (or raisins), 1/4 cup sugar, 1 teaspoon vanilla, and cinnamon. Set aside.

In another bowl, combine the flour, 1/2 cup sugar, and baking powder. Cut in the butter with a pastry cutter or two knives until the mixture resembles coarse crumbs, with pea-sized pieces of butter remaining.

In a separate bowl, whisk together the sour cream, eggs, and 1 teaspoon vanilla until smooth. Add this mixture to the dry ingredients and stir until just combined into a soft dough.

Spread about half of the dough evenly into the prepared pan, pressing it gently into place. Bake for 15 minutes, until slightly set but not browned. Remove from oven.

Spread the apple mixture evenly over the baked crust. Drop spoonfuls of the remaining dough over the apples, then gently spread or pat to cover the fruit as much as possible.

Return the pan to the oven and bake for 30–35 minutes, or until the top is golden brown and the edges are set.

Allow to cool in the pan before cutting into squares. Dust with powdered sugar just before serving, if desired.
