One delightful way to extend cherry season is by capturing the fruit’s deep, sweet flavor in a homemade cordial. These ruby-red brandied cherries steep for several months, developing a smooth, luscious liqueur that’s perfect for sipping or gifting during the holidays. Spoon the cherries over ice cream or serve them with sparkling wine for an elegant treat.
INGREDIENTS:
1 cup sugar
1 cup water
1 cup pitted cherries or raspberries
1 cup good quality brandy
METHOD:
In a small saucepan, combine sugar and water. Bring to a gentle boil over medium heat, stirring until the sugar fully dissolves. Remove from heat and allow to cool to room temperature.
In a clean glass jar with a tight-fitting lid, add the pitted cherries. Pour in the cooled syrup, then add the brandy. Stir gently to combine.
Seal the jar and store in a cool, dark place for 2 to 3 months, gently inverting or stirring every few weeks to help the flavors blend.
When ready, strain if desired, or leave the fruit in the cordial. Transfer to decorative bottles for gifts or refrigerate once opened.
