Apple Cucumber Juice

INGREDIENTS:

1 large cucumber
1 apple
2 tablespoons loosely chopped parsley

METHOD:

Wash the cucumber, apple, and parsley thoroughly. Cut the cucumber and apple into chunks, removing the apple core.

Place all ingredients in a high-speed blender (such as a VitaMix).

Blend on high until smooth and well combined.

For a lighter texture, strain the mixture through a fine mesh sieve or nut milk bag, if desired.

Serve immediately over ice or chilled in the refrigerator.
