Sparkling Watermelon Limeade Cooler

This sparkling cooler is pure summertime refreshment — icy, fruity, and effervescent. Frozen cubes of sweet watermelon are blended with tangy limeade and bubbly ginger ale for a drink that’s as beautiful as it is delicious. Perfect for backyard gatherings, picnics, or any afternoon that calls for something cool and cheerful. Make sure to freeze the watermelon ahead of time for the best frosty texture!

INGREDIENTS:

1 small watermelon, cut into 1/2-inch cubes watermelon (8 cups)
1 1/2 cups ginger ale
1/3 cup water
1 can (6 oz) frozen limeade concentrate, thawed

METHOD:

Cut watermelon into ½-inch cubes, discarding any seeds. Arrange cubes in a single layer inside a large resealable freezer bag placed on a baking sheet. Freeze for at least 8 hours or overnight.

When ready to serve, remove frozen watermelon from the freezer and let stand at room temperature for about 15 minutes to slightly soften.

Add half the frozen watermelon, half the ginger ale, half the water, and half the limeade concentrate to a blender. Blend on medium speed until smooth. Pour into a large pitcher. Repeat with the remaining ingredients and stir to combine.

Pour into chilled glasses and garnish with a slice of lime or a sprig of mint if desired.
