California Peaches — The Sweet Taste of Summer

California peaches have rightfully earned their reputation for succulent flavor and heavenly aroma. For those who crave the classic peach experience, yellow varieties are the perfect choice. Bursting with juiciness and sweetness, these peaches carry a tangy bite thanks to their slightly higher acid content.

White peaches, on the other hand, offer a unique twist. With their creamy-white flesh and lower acidity, they’re exceptionally sweet and delicately floral in aroma. Their tender, juicy flesh makes them a favorite among those who enjoy a softer, more subtle peach flavor.

Peaches thrive in California’s Central Valley, where the Mediterranean climate and fertile soils create ideal growing conditions. The prime peach-growing regions—Madera, Fresno, and Tulare counties—make California the nation’s leading peach producer, accounting for about 70% of the total U.S. crop. In fact, California outshines all 32 other peach-growing states combined.

The peach harvest is one of the season’s most anticipated events. The earliest cling peaches arrive from Hickman, Winston, and Stockton. Clingstone varieties are typically harvested from mid-July through mid-September, while local Santa Cruz County freestones are available from April to October. August marks the height of peach season and is celebrated nationally as Peach Month, honoring this iconic fruit.

How to Select

To pick a perfectly ripe peach, use a gentle touch. Avoid squeezing the sides, which can cause bruising. Instead, press near the stem—if it yields slightly, it’s ripe and ready. Be cautious with peaches stacked tightly together, as their delicate skin bruises easily, leading to quicker spoilage.

How to Store

Peaches continue to ripen after harvest. If yours are a bit firm, leave them at room temperature for a day or two. Once ripe, transfer them to the refrigerator to extend freshness for several more days.
