Apple, Rum, and Raisin Ham Glaze

INGREDIENTS:

1/2 cup apple jelly
1/2 cup orange juice
1/2 cup golden raisins
1/2 cup rum
1 tablespoon dry mustard
2 tablespoons brown sugar
2 tablespoons cornstarch

METHOD:

In a small saucepan, whisk together the apple jelly, orange juice, raisins, and rum. Warm over low heat, stirring often, until the jelly melts and the mixture is smooth.

In a small bowl, whisk together the dry mustard, brown sugar, and cornstarch. Gradually whisk this mixture into the warm jelly mixture until fully combined. Increase heat slightly and cook, stirring constantly, until the glaze thickens and turns glossy—about 3–5 minutes. Remove from heat and let cool slightly.

Brush the glaze generously over your ham during the last 30 minutes of baking, and again during the final 15 minutes for a rich caramelized coating.

Warm any remaining glaze and serve alongside the sliced ham.
