Blue Cheese Butter

Blue Cheese with its distinctive rich taste and buttery texture, pairs beautifully with creamy butter and herbs. It can take a simple grilled steak and elevate it to a fine dining experience. This compound butter is also great tossed with cooked vegetables.

INGREDIENTS:
1 cup butter, softened (use a good quality, flavorful butter)
1/2 cup crumbled blue cheese
1 tablespoon chopped parsley
1 tablespoon chopped fresh basil
1 clove garlic, minced
1/4 teaspoon salt
1/4 teaspoon freshly coarse ground pepper

METHOD:
Using a fork, combine all ingredients in a small bowl and mix to combine well.

Using a rubber spatula, scrape the mixture onto a piece of parchment or plastic wrap in a mound. Wrap the paper or plastic around the mixture and gently mold it into a log shape. Place it in the fridge for an hour before serving.

To use, slice the ‘log’ into thick pats to serve with hot grilled steaks.
