This is a quick, easy dinner and very delicious! Serve with a side of steamed green beans. Use a mild white fish such as cod.
INGREDIENTS:
2 lbs. fish fillets (cut into 6 portions)
1/4 cup flour
1 teaspoon seasoned salt (such as Lawry’s)
1 teaspoon paprika
1/4 cup butter, melted and divided
1/2 cup sliced almonds
2 tablespoons fresh squeezed lemon juice
4-5 drops Tabasco sauce
1 tablespoon chopped parsley
METHOD:
Preheat the broiler on high. Arrange the oven rack about 4 inches from the heating element.
Combine flour, seasoned salt, and paprika in a zip-lock bag and shake to mix well.
Place fish fillets in the bag with flour mixture and shake to coat well.
Place fish in a single layer, skin side down, on a well-greased rimmed baking pan.
Drizzle 2 tablespoons of melted butter over the fish. Broil about 4 inches from the heat source, for 10-12 minutes, depending upon thickness of fillets. (Rule of thumb: 8 minutes to the inch. Adjust your cooking time if you are using thinner fillets.)
While the fish is broiling, sauté almonds in the remaining butter in a small skillet until golden brown, stirring constantly. Remove from heat. Add lemon juice, hot pepper sauce, and parsley. Stir to combine.
Pour sauce over hot fish and serve at once.
