This irresistible version of macaroni and cheese comes from former farmers market vendor Evette Lecce. Using fresh artisan macaroni and a luxurious blend of Fontina, Gruyère, and Emmenthaler cheeses, this dish delivers creamy depth and rich flavor in every bite. A splash of sherry and a touch of thyme and nutmeg add just enough sophistication to make this classic comfort food feel all grown up.
INGREDIENTS:
1 lb. fresh macaroni pasta
1/4 cup butter
3 tablespoons all-purpose flour
2 cups chicken stock
1/4 cup dry sherry
1 cup heavy cream
1 cup Fontina cheese, grated
1/2 cup Gruyère cheese, grated
1/2 cup Emmenthaler cheese, grated
1/2 teaspoon thyme
1/2 teaspoon nutmeg
Salt 
Cayenne pepper
1/4 cup bread crumbs
1/4 cup Parmigiano-Reggiano cheese, grated
METHOD:
Preheat the oven to 375°F. Lightly butter or oil a 9 x 13-inch baking dish and set aside.
Bring a large pot of salted water to a boil. Add the macaroni and cook just until al dente, according to the package directions. Drain well and set aside.
In a large sauté pan or heavy saucepan, melt the butter over medium heat. Whisk in the flour and cook, stirring constantly, for about 1 minute to form a pale roux. Gradually whisk in the chicken stock, followed by the sherry. Continue whisking until the mixture is smooth and slightly thickened, 3–4 minutes.
Reduce the heat to low and stir in the cream. Slowly add the Fontina, Gruyère, and Emmenthaler cheeses, stirring until completely melted and smooth. Season the sauce with thyme, nutmeg, salt, and a pinch of cayenne pepper to taste.
Place the cooked macaroni in the prepared baking dish and pour the cheese sauce over the top. Gently toss or stir until the pasta is evenly coated.
In a small bowl, combine the bread crumbs with the Parmigiano-Reggiano cheese and sprinkle evenly over the pasta.
Bake uncovered for 25–30 minutes, or until the sauce is bubbling and the top is lightly golden and crisp.
Remove from the oven and let rest 5 minutes before serving.
