Having a party? Here’s a great dish for a crowd — add some grilled veggies, pita bread, and tzatziki for an easy summertime dinner!
INGREDIENTS:
20 6 oz. boneless skinless chicken breasts
1 quart nonfat plain Greek yogurt
1/4 cup garlic minced
1 tablespoon coriander
1 tablespoon cumin
1 tablespoon cinnamon
2 teaspoons cayenne
2 teaspoons cardamon
1/4 cup freshly squeezed lime juice
salt to taste
1/4 cup olive oil
METHOD:
Trim excess fat off chicken breasts. Combine all ingredients. Marinate chicken breasts for at least 4 hours.
Grill over medium coals. Slice chicken into 1-inch strips. Serve with grilled veggies and pita bread.
