Herbal Lemon Marinade for Chicken

This bright, aromatic marinade brings together fresh herbs, zesty lemon, and garlic to infuse chicken with incredible flavor. The combination of thyme, rosemary, and sage creates a savory depth, while the citrus and olive oil keep the meat tender and juicy. Perfect for grilling, roasting, or meal prep, this versatile marinade transforms ordinary chicken into a flavorful, crowd-pleasing dish.

INGREDIENTS:

1 cup extra virgin olive oil
1/2 cup canola or avocado oil
Zest of 4 lemons
1/4 cup fresh lemon juice
1/4 cup fresh thyme, chopped
1/4 cup fresh sage, chopped
1/4 cup fresh rosemary, chopped
6 cloves fresh garlic, minced
1 tablespoon coarse ground black pepper
1 tablespoon sea salt or Kosher salt

METHOD:

Place all ingredients in a blender. Blend for about 30 seconds, until well combined and herbs are finely incorporated.

For 6–8 boneless chicken breasts, gently pound to an even thickness. Use a fork to lightly pierce each piece of chicken to help the marinade penetrate.

Place chicken in a large zip-top bag or shallow glass dish. Pour marinade over chicken, seal tightly, and place in a dish (to catch any leaks). Refrigerate for at least 2 hours, or up to overnight, turning occasionally.

Remove chicken from marinade and discard excess liquid. Grill over medium-high heat (about 6–7 minutes per side) until internal temperature reaches 165°F. Or roast in a preheated oven at 400°F for 20–25 minutes, depending on thickness.

Rest chicken for 5 minutes before slicing. Enjoy with salads, grains, or roasted vegetables.
