INGREDIENTS:
1 cup extra virgin olive oil
1/2 cup canola or avocado oil
Zest of 4 lemons
1/4 cup fresh lemon juice
1/4 cup fresh thyme, chopped
1/4 cup fresh sage, chopped
1/4 cup fresh rosemary, chopped
6 cloves fresh garlic, minced
1 tablespoon coarse ground black pepper
1 tablespoon sea salt or Kosher salt
METHOD:
Place all of the ingredients in a blender and mix for 30 seconds.
For 6-8 boneless chicken breasts, pound the breasts to flatten slightly. Use a fork to pierce the chicken breasts. Place chicken in a zip-top plastic bag and pour marinade over. Place bag with chicken in a large pan and marinate for several hours in the refrigerator.
To cook, grill or roast the chicken per your personal preference.
