Bright, sweet, and fiery, this marinade brings together the freshness of lemon juice, the sweetness of honey, and the bold kick of jalapeño and ginger. Soy sauce and garlic add savory depth, while thyme provides a fragrant herbal note. Perfect for pork or poultry, this marinade infuses the meat with layered flavor and a touch of heat, making it ideal for broiling or grilling.
INGREDIENTS:
1/3 cup lemon juice
2 tablespoons soy sauce
2 tablespoons vegetable oil
2 tablespoons honey
1 clove garlic, finely minced
1 jalapeno pepper, finely minced
2 teaspoons fresh ginger root, finely minced
1 teaspoon fresh thyme
METHOD:
In a medium bowl, whisk together lemon juice, soy sauce, oil, honey, garlic, jalapeño, ginger, and thyme until well blended.
Place pork or poultry in a resealable bag or shallow dish. Pour marinade over the meat, turning to coat evenly.
Cover and refrigerate for at least 4 hours, or up to overnight for fuller flavor.
Before cooking, remove the meat from the marinade and pat lightly with paper towels to dry slightly (this prevents burning).
Grill or broil until cooked through, basting occasionally with fresh marinade if desired.
Tip: For extra citrus brightness, sprinkle a little fresh lemon zest over the cooked meat just before serving.
