Ground Cherry Relish

This tangy relish makes a nice change to cranberry relish at Thanksgiving! Use it with cold turkey sandwiches, too.

INGREDIENTS:

1 cup sugar
2 tablespoons water
1/2 cup minced white onion
1/4 cup apple cider vinegar
1 cup ground cherries, husked and washed
Freshly ground pepper and salt to taste

METHOD:

Combine sugar and water in a medium saucepan. over medium heat, stir until mixture comes to a boil. Add minced onion and apple cider vinegar. Continue cooking for 5 minutes, or until onions are softened. Stir in ground cherries. Continue cooking, stirring, until most of the cherries have burst and the mixture has slightly thickened. Add salt and pepper to taste.  Allow to cool and store in refrigerator.
