Juicy, fragrant peaches take center stage in this bright and refreshing Summer Peach Salsa, a perfect balance of sweet, spicy, and herbal flavors. Fresh mint and ginger add a lively twist, while red onion and bell pepper lend crunch and color. This versatile salsa captures the essence of summer and pairs beautifully with grilled fish, chicken, or lamb. Try it spooned over tacos, served with tortilla chips, or as a vibrant topping for grain bowls—it’s sunshine in a bowl.
INGREDIENTS:
2 cups ripe peaches, peeled and diced
1/2 cup red onion, finely diced
1/2 cup red bell pepper, diced
1/2 cup fresh mint, minced
3/4 teaspoon jalapeño or serrano chile, minced (adjust to taste)
2 tablespoons olive oil
2 tablespoons lime juice
2 tablespoons fresh ginger root, grated
METHOD:
Peel and dice the peaches into small, even pieces. Finely dice the red onion, bell pepper, and chile, and mince the fresh mint. Grate the ginger.
In a medium mixing bowl, gently toss together the peaches, onion, bell pepper, mint, and chile. Drizzle in the olive oil, add the lime juice and ginger, and stir until evenly coated.
Taste and adjust the seasoning—add a touch more lime for brightness or chile for heat. Let the salsa rest for 30 minutes at room temperature to allow the flavors to meld.
Transfer to a serving bowl. Serve at room temperature or lightly chilled.
