Cilantro Pepper Salsa

Bright, zesty, and completely fat-free, this vibrant green salsa bursts with fresh flavor. A blend of cilantro, lime, and mild heat from serrano and bell peppers creates a sauce that’s both refreshing and bold. The rice vinegar and touch of brown sugar balance acidity and spice, making it irresistibly versatile. INGREDIENTS:

1 big bunch cilantro, washed, large stems removed
1/2 white onion, peeled
1/2 (or to taste) serrano chile
1 green bell pepper, stemmed and seeded
Juice of 1 lime
1/4 cup rice wine vinegar
2 tablespoons brown sugar
Salt to taste

METHOD:

Puree all ingredients in a blender until smooth, starting slowly and adding ingredients as the mixture thickens. Taste and adjust seasonings — it should “sing” with bright flavor!

Serve as a fat-free dip for vegetables, or spoon over grilled chicken or fish.
