Creamy Cilantro Dressing

Bright, tangy, and irresistibly fresh, this Creamy Cilantro Dressing is the perfect way to wake up salads, roasted vegetables, or grilled meats. INGREDIENTS:

1/4 cup white balsamic vinegar
1/3 cup cilantro stems, chopped
1/2 teaspoon coriander seed, ground
1/4 teaspoon dried thyme, powdered
Salt and pepper to taste
1 teaspoon agave syrup if needed, or to taste for balance
1/4 cup cup olive oil
1/4 cup yogurt

METHOD:

Place the vinegar, cilantro stems, coriander, thyme, salt, pepper, and agave (if using) into a blender. Begin on low speed, then increase to high. Blend for about 2 minutes, until smooth.

Add the yogurt and blend again until creamy.

With the motor running, slowly drizzle in the olive oil through the blender’s center opening. Continue blending until the dressing thickens and emulsifies.

Taste and adjust seasoning as needed. For an extra-smooth texture, strain through a fine mesh sieve if cilantro or coriander pieces remain.

Transfer to a container, cover, and refrigerate. The dressing will keep for 3 to 4 days, though its flavor is best enjoyed fresh.
