Creamy Cilantro Lime Dressing

Bright, tangy, and irresistibly creamy, this Creamy Cilantro Lime Dressing is a zesty twist on classic Ranch. Fresh cilantro, chives, lime juice, and garlic come together in a smooth blend that’s as versatile as it is flavorful. Use it to dress a summer salad loaded with greens, grilled chicken, roasted corn, black beans, and red onion—or serve it as a cool, herby dip alongside fresh vegetables. It’s a simple, vibrant dressing that adds a burst of freshness to any meal.

INGREDIENTS:

3/4 cup mayonnaise
3/4 cup Greek yogurt
2 tablespoons freshly-squeezed lime juice
2 tablespoon olive oil
1/3 cup buttermilk (or regular milk)
1/3 cup (packed) fresh cilantro leaves
2 tablespoons fresh chives, roughly chopped
2 cloves garlic, peeled and roughly chopped
1/2 teaspoon salt (or to taste)
1/4 teaspoon black pepper

METHOD:

Add all ingredients—mayonnaise, yogurt, lime juice, olive oil, buttermilk, cilantro, chives, garlic, salt, and pepper—to a blender or food processor.

Blend for 30 seconds, scrape down the sides, and blend again for another 30 seconds, or until the mixture is completely smooth and creamy.

Taste and adjust seasoning if needed. Transfer to a clean jar or airtight container and refrigerate for at least 30 minutes before serving to allow the flavors to meld.

Use as a salad dressing, drizzle over tacos or grain bowls, or serve as a dip for fresh vegetables or grilled meats.

YIELD: 1 1/2 cups
