INGREDIENTS:
2 cups basil leaves (about 1 large bunch)
1/2 cup extra virgin olive oil
1/4 cup white wine or champagne vinegar
1 large clove garlic
Salt and pepper to taste
METHOD:
Wash and dry the basil leaves thoroughly, removing any tough stems.
In a blender or food processor, combine the basil, olive oil, vinegar, and garlic. Blend until smooth and creamy. Season to taste with salt and freshly ground black pepper. Blend briefly again to combine.
Transfer to a jar or bottle, cover, and refrigerate until ready to use. Shake well before serving.
