Honey Lemon Vinaigrette

Light, bright, and slightly sweet, this honey lemon vinaigrette balances citrusy freshness with a touch of spice. It’s simple to make, versatile, and delicious over leafy greens, grain salads, or grilled vegetables.

INGREDIENTS:

3/4 cup vegetable oil 
1/4 cup fresh lemon juice
1 tablespoon sugar
3/4 teaspoon salt, to taste
1/4 teaspoon black pepper
1/4 teaspoon paprika
1/4 teaspoon dry mustard
1/4 teaspoon lemon zest
1/2 cup honey
1/2 teaspoon celery seed
1 garlic clove, optional

METHOD:

Combine all ingredients in a salad dressing shaker or a jar with a tight-fitting lid. Shake vigorously until well blended.

If using garlic, cut the clove in half and add it to the dressing. Chill for at least 12 hours before serving, then remove the garlic.

Store covered in the refrigerator. Shake well before each use.

YIELD: 1 1/4 cups dressing
