Cherry-Melon Mint Salad

Juicy cherries and fragrant melons come together in this refreshing summer salad — a celebration of bright color and natural sweetness. A drizzle of honey and a splash of citrus bring everything into perfect balance, while fresh mint adds a cooling finish. It’s light, simple, and beautiful — ideal for brunch, a picnic, or a cooling side dish on a warm day.

INGREDIENTS:

1/4 honeydew melon, seeds and rind removed, and cut into 1/2″ slices
1/4 cantaloupe melon, seeds and rind removed, and cut into 1/2″ slices
1/4 cup minced fresh mint, plus mint sprigs for garnish
2 tablespoons light honey
1 1/2 cups pitted fresh cherries
Juice of 1 lemon
Juice of 2 limes

METHOD:

Place the honeydew, cantaloupe, and minced mint in a large bowl. Toss gently to combine.

In a small bowl, whisk together the honey and lemon juice until the honey dissolves completely.

Pour the lemon–honey mixture over the melons and toss gently to coat. Add the cherries and toss once more to distribute evenly.

Drizzle with the lime juice, toss lightly, and garnish with mint sprigs. Serve immediately, or chill for 30 minutes before serving for extra refreshment.

SERVING SUGGESTIONS:

  • Serve as a brunch side dish or light dessert with a dollop of Greek yogurt.

  • Add a handful of toasted almonds or pistachios for crunch.

  • Sprinkle with a pinch of sea salt or chili flakes for a modern twist.
