INGREDIENTS:
1 (5-pound) seedless watermelon, chilled
1 sweet Vidalia or red onion, peeled
1/4 cup red wine vinegar or freshly squeezed lime juice
Salt and pepper
1/2 cup extra-virgin olive oil
2 tablespoons fresh mint, chopped
2 tablespoons flat leaf parsley, chopped
4 ounces feta cheese, crumbled into large pieces
6 whole mint sprigs
METHOD:
Cut the flesh from the watermelon and slice into bite-sized chunks. Remove any stray seeds and set aside in a large mixing bowl.
Cut the onion in half, then slice very thinly into half-moons. Add to the watermelon bowl.
In a small bowl, whisk together the vinegar or lime juice with a pinch of salt and pepper until the salt dissolves. Slowly drizzle in the olive oil, whisking constantly until the dressing is emulsified. Stir in the chopped mint and parsley. Taste and adjust seasoning as needed.
Add the crumbled feta to the watermelon and onion mixture. Pour the dressing over the top and toss gently with a large spoon or your hands to avoid breaking up the feta.
