Basque Chili Aioli

This smoky, subtly spicy aioli is inspired by the flavors of the Basque countryside, where chili and garlic are pantry essentials. Made with just a few simple ingredients, it’s a vibrant condiment that adds depth to grilled seafood, roasted vegetables, or even a humble sandwich. The Basque chili powder gives it a gentle heat and a beautiful warm color—perfect for bringing a touch of southern France and northern Spain to your table.

INGREDIENTS:

½ cup good-quality mayonnaise
1 small garlic clove, finely minced or pressed
1 teaspoon lemon juice
½ to 1 teaspoon Basque Chili Powder* (to taste)
Pinch of sea salt

METHOD:

In a small bowl, stir together mayonnaise, garlic, and lemon juice.

Add Basque Chili Powder and salt; mix until smooth and evenly colored.

Taste and adjust seasoning—add a little more chili powder if you want a deeper flavor. Chill 10–15 minutes before serving to allow the flavors to bloom.

SERVING SUGGESTIONS:

  • Serve with grilled shrimp, roasted potatoes, or steamed artichokes.
  • Spread on sandwiches or burgers.
  • Use as a dip for sweet potato fries or seasonal vegetables.
