INGREDIENTS:
1 egg white
1 tablespoon water
3 cups whole blanched almonds (about 1 lb.)
1/4 cup sugar
2 teaspoons ground cumin
1 teaspoon ground coriander
2 teaspoons coarse salt
1 1/2 teaspoons ground red pepper
METHOD:
Preheat oven to 275°F. Line a rimmed baking sheet with parchment paper or a silicone baking mat.
In a large bowl, whisk together egg white and water until frothy. Add almonds and toss until evenly coated.
Transfer almonds to a fine-mesh sieve and let them drain for 1–2 minutes, gently tossing to remove excess liquid.
In a separate bowl, mix sugar, cumin, coriander, salt, and red pepper. Add the drained almonds and toss well until evenly coated with the spice mixture.
Spread the almonds in a single layer on the prepared baking sheet. Bake for 30 minutes, stirring once halfway through.
Lower the oven temperature to 200°F and continue baking for another 25–30 minutes, stirring occasionally, until the almonds are dry, crisp, and golden brown.
Let the almonds cool completely (about 15 minutes). Store in an airtight container at room temperature for up to one week.
