INGREDIENTS:
3 cups walnuts, shelled
1/2 cup brown sugar
1/2 cup granulated sugar
2 tablespoon water
4 tablespoons butter
1 teaspoon pure vanilla extract
METHOD:
Line a half-sheet baking pan with parchment paper or a silicone baking mat and set aside.
In a large, heavy saucepan, combine brown sugar, granulated sugar, water, and butter. Stir over medium heat until the butter melts and the mixture comes to a boil. Attach a candy thermometer to the side of the pan.
Add the walnuts and stir constantly as the mixture bubbles. Continue cooking until the temperature reaches 285–290°F (soft-crack stage), and the nuts are evenly coated and glossy. Watch carefully to prevent burning.
Remove from heat, stir in vanilla extract, and mix well. Quickly pour the nuts onto the prepared baking sheet. While still warm, use two forks to separate them into clusters or individual pieces.
Allow the toffee walnuts to cool completely until hardened. Store in an airtight container at room temperature for up to two weeks.
