Walnut Duxelle Pâté

INGREDIENTS:

4 tablespoons butter
4 cups fresh mushrooms, finely chopped (about 1 lb.)
1/2 cup scallions, white portion only
1/4 teaspoon thyme
1 teaspoon salt
1/3 cup dry sherry
8 ounces cream cheese, softened
1 cup finely chopped walnuts, toasted
1 cup fresh parsley, finely chopped
Dash Tabasco hot sauce
1/4 cup fresh chives, finely chopped

METHOD:

In a large, heavy skillet, melt the butter over moderate heat. Add mushrooms, scallions, and thyme. Cook, stirring occasionally, until the scallions are translucent and the mushrooms have released their liquid, about 5–8 minutes.

Add the salt and dry sherry. Continue cooking until most of the liquid has evaporated and the mixture is nearly dry. Remove from heat and allow to cool to room temperature.

In a mixing bowl, combine the softened cream cheese with the cooled mushroom mixture. Stir until smooth and evenly blended.

Stir in the toasted walnuts, parsley, and a dash of Tabasco for a touch of heat. Mix well to incorporate all ingredients.

Spoon the pâté into a small crock or terrine. Cover and refrigerate for at least 2 hours to allow the flavors to meld. Before serving, sprinkle with chopped chives. Serve chilled or at room temperature with toasted baguette slices or crisp seed crackers.

YIELD: About 2 cups
