Candied Spicy Bacon

Sweet, smoky, and just the right amount of spicy, this irresistible bacon is a guaranteed crowd-pleaser. Coated with brown sugar and cayenne, the strips bake into crisp, caramelized perfection—like breakfast candy with a little kick. It’s an easy way to elevate the usual brunch fare, and it’s equally delicious served alongside pancakes, crumbled over salads, or tucked into sandwiches. INGREDIENTS:

2 teaspoons vegetable oil
1 cup packed light brown sugar
3/4 teaspoon cayenne pepper (adjust to taste)
1 pound thick-sliced bacon (such as Corralitos Market bacon)

METHOD:

Preheat the oven to 350°F. Line a rimmed baking sheet with foil and place a broiler rack or oven-safe cooling rack on top. Lightly brush or spray the rack with vegetable oil.

In a shallow dish, combine the brown sugar and cayenne pepper, stirring well to blend.

Press one side of each bacon slice firmly into the sugar mixture to coat. Arrange the slices in a single layer on the prepared rack, sugared-side up. Sprinkle any remaining sugar mixture evenly over the top.

Bake for 15–20 minutes, or until the bacon is crisp and the sugar is melted and bubbly. Watch closely near the end of baking to prevent burning.

Transfer bacon to paper towels for a brief drain, then move to a wire rack or platter to cool. The sugar will firm up as it cools, creating a glossy, candied finish.

Serve warm or at room temperature. Bacon can be made several hours ahead and kept uncovered to maintain its crispness.
