INGREDIENTS:
3 cups chopped peeled kiwi
1 package dry pectin
1 cup unsweetened pineapple juice
4 cups sugar
A drop or two of green food coloring, if desired
METHOD:
Combine kiwi, pectin and pineapple juice in a large saucepan. Bring to a boil stirring constantly.
Add sugar. Continue stirring until sugar is dissolved.
Return mixture to a rolling boil and boil hard for 1 minute, stirring constantly.
Remove from heat and skim off any foam. (Add a drop of green food coloring, if desired.)
Ladle into clean hot jars leaving 1/4 inch head space.
Process 10 minutes in a boiling water bath. Remove and allow to cool undisturbed 24 hours. Check for seals.
YIELD: 4 half pints
