Lemon Vanilla Ice Cream

For our lemon vanilla ice cream, we combined sweetened condensed milk, heavy cream, whole milk, and sugar to create a creamy base. Freshly squeezed lemon juice, lemon zest, and a touch of vanilla bring in that irresistible zing. The blend of tart lemon and sweet cream is both refreshing and rich—total perfection!

INGREDIENTS:
7 ounces sweetened condensed milk exactly half of a standard 14-ounce can
1/2 cup fresh lemon juice, about 3 large lemons
3 tablespoons fresh lemon zest finely minced
1 cup heavy cream
1 cup milk
1/2 cup sugar
1/8 teaspoon salt
1 teaspoon pure vanilla extract
Additional lemon zest for topping, if desired

METHOD:

In a large bowl, whisk together the condensed milk and the lemon juice until completely thoroughly combined. Whisk in lemon zest, cream, milk, sugar, salt and vanilla.

Pour mixture into an ice cream maker and freeze according to the manufacturer’s instructions.

For soft ice cream, serve immediately. For firmer ice cream, transfer to an airtight container and store in the freezer until ready to serve.
