3⁄ 4 cup sugar
2 tablespoons cornstarch
1⁄ 4 teaspoon ground cinnamon
2 cups fresh blueberries
2 cups fresh cherries (sour cherries are best)
1 teaspoon lemon juice
1/4 teaspoon almond extract
Biscuit topping
1 cup flour
1 tablespoon sugar
1 1⁄2 teaspoon baking powder
1⁄ 2 teaspoon kosher salt
3 tablespoons shortening
1⁄ 2 cup milk
METHOD:
Preheat oven to 400°F. Lightly grease an 8 x 8-inch baking dish with butter or non-stick spray; set aside.
In a medium saucepan, whisk together the sugar, cornstarch, and cinnamon. Add the cherries and blueberries and cook over medium heat, stirring frequently, until the mixture thickens and becomes glossy, about 7–8 minutes. Remove from heat and stir in the lemon juice and almond extract. Pour the fruit filling evenly into the prepared baking dish.
In a mixing bowl, whisk together flour, sugar, baking powder, and salt. Using your fingers or a pastry cutter, work the shortening (or butter) into the flour mixture until it forms coarse, pea-sized crumbs. Stir in the milk until a soft dough forms.
